Agave selection
When harvest time arrives, the leaves of the mature agaves are skillfully shaved off, and the heart, known as the pineapple, is carefully extracted to give rise to the magic of this ancient elixir.
Each maguey plant is selected with love and deep respect for the land that has nourished it for more than 18 years, ensuring that only the most mature and vigorous specimens are used in our mezcal.
This careful process is the first tangible manifestation of the tradition and dedication reflected in every bottle of Mezcal Patatús.
